2 cups mixed mushrooms (cremini, shiitake, and button), sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

½ cup beef broth

1 teaspoon Dijon mustard

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil and butter over medium heat until melted and bubbling.

    Add the finely chopped onion and sauté for about 3 minutes, until translucent.

      Stir in the minced garlic and cook for another minute until fragrant.

        Add the sliced mushrooms to the skillet, season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.

          Pour in the beef broth and stir, scraping any browned bits from the bottom of the pan. Let simmer for 2-3 minutes to reduce slightly.

            Reduce the heat to low and stir in the heavy cream, Dijon mustard, and thyme. Cook for an additional 3-5 minutes until the sauce is thickened to your liking.
