Crockpot French Onion Meatloaf with Melted Swiss Cheese

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs

1/2 cup grated parmesan cheese

1 large onion, finely sliced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded Swiss cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Onions: In a skillet over medium heat, add a drizzle of olive oil. Sauté the sliced onions for about 10-15 minutes until they are caramelized and golden brown. Remove from heat and set aside.

    Mix the Meatloaf Filling: In a large bowl, combine the ground beef, ground pork, breadcrumbs, parmesan cheese, Worcestershire sauce, thyme, garlic, salt, and black pepper. Add half of the caramelized onions to the meat mixture and combine well.

      Shape the Meatloaf: Form the meat mixture into a loaf shape and place it gently in the crockpot, ensuring it is centered and not touching the sides.

        Add Broth: Pour the beef broth around the meatloaf in the crockpot, ensuring that the bottom of the meatloaf is submerged.

          Cook: Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the meatloaf is cooked through (internal temperature should reach 160°F).

            Melt the Cheese: About 30 minutes before serving, carefully uncover the crockpot and sprinkle the shredded Swiss cheese over the top of the meatloaf. Re-cover and continue cooking until the cheese is melted and bubbly.

              Serve: Once done, carefully lift the meatloaf out of the crockpot using a spatula. Let it rest for a few minutes before slicing.
