1 pound flank steak, cut into bite-sized cubes

4 medium-sized Yukon Gold potatoes, diced into 1-inch pieces

1/4 cup unsalted butter

4 cloves garlic, minced

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: While the potatoes are cooking, heat a large skillet over medium-high heat and add olive oil. Once hot, add the steak bites in batches to avoid overcrowding. Season with salt and pepper. Sear for about 2-3 minutes on each side until browned and cooked to your desired level of doneness. Remove steak from the skillet and set aside on a plate.

      Make Garlic Butter: In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and thyme, cooking for about 1-2 minutes until fragrant.

        Combine: Add the drained potatoes to the skillet with the garlic butter. Toss well to coat the potatoes in the garlic butter mixture. Cook for an additional 4-5 minutes, stirring occasionally until the potatoes are slightly crispy and golden.

          Mix Steak and Potatoes: Return the cooked steak bites to the skillet. Toss everything together gently, allowing the flavors to meld for another 2-3 minutes.
