1 tablespoon ground flaxseed

1 cup almond milk (or any milk of choice)

2 tablespoons maple syrup

1 teaspoon vanilla extract

1 tablespoon coconut oil, melted (plus extra for greasing)

2 cups fresh strawberries, hulled and sliced

1 tablespoon honey or additional maple syrup (optional)

Whipped coconut cream or Greek yogurt for topping (optional)

Preheat Waffle Iron: Start by preheating your waffle iron according to the manufacturer’s instructions.

    Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, salt, ground flaxseed, and cinnamon.

      Combine Wet Ingredients: In another bowl, mix the almond milk, maple syrup, vanilla extract, and melted coconut oil until well combined.

        Mix Batter: Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined; it's okay if the batter is a little lumpy—do not overmix.

          Cook Waffles: Grease the preheated waffle iron with a small amount of coconut oil. Pour an appropriate amount of batter into the center of the iron (usually about 1/2 cup, depending on your waffle iron), close the lid, and cook until golden brown. This usually takes about 4-5 minutes but may vary depending on your machine.

            Prepare Strawberry Topping: While the waffles are cooking, combine the sliced strawberries in a bowl. If desired, drizzle with honey or extra maple syrup for added sweetness. Toss gently to coat.
