In a small mixing bowl, whisk together the maple syrup, Dijon mustard, minced garlic, apple cider vinegar, thyme, salt, and pepper until well combined.
Pat the chicken thighs dry with paper towels to ensure crispy skin. Season both sides with salt and pepper.
Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, place the chicken thighs skin-side down in the skillet and sear for about 5-7 minutes, or until the skin is golden brown and crisp.
Flip the chicken thighs over so the skin side is up, then brush generously with the maple Dijon sauce. Reserve a little sauce for later.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear.
During the last 5 minutes of cooking, brush the chicken with the reserved sauce for an extra glaze.
Remove from oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
