1 lb (450g) sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

Salt and freshly ground pepper, to taste

1 teaspoon smoked paprika

1 tablespoon fresh parsley, chopped (for garnish)

For the Creamy Parmesan Sauce:

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 teaspoon lemon zest

Prepare the Steak Bites: Season the steak cubes with salt, black pepper, and smoked paprika. Make sure all sides are coated evenly.

    Sear the Steak: In a large skillet, heat 2 tablespoons of butter over medium-high heat. Once the butter is melted and bubbling, add half of the steak cubes in a single layer. Avoid overcrowding the pan. Cook for 2-3 minutes without moving, then flip and sear the other side for another 2-3 minutes until browned. Remove the steak bites and repeat with the remaining steak, adding more butter if necessary.

      Add Garlic: Once all steak bites are cooked and removed from the skillet, lower the heat to medium. Add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Make the Parmesan Sauce: Pour in the heavy cream to the skillet and stir well to combine with the garlic butter. Bring the mixture to a simmer, then add the grated Parmesan cheese, garlic powder, black pepper, and lemon zest. Stir continuously until the cheese is melted and the sauce is creamy. Adjust salt to taste as necessary.

          Combine Steak and Sauce: Add the seared steak bites back to the skillet and toss them in the creamy Parmesan sauce. Allow them to heat through for about 1-2 minutes.
